I usually serve this Tomato and Roasted Pepper Soup with a fresh baked roll and a little butter. The rolls are just under 13p each. Allowing a few pennies for the butter that’s just 37p for a healthy and filling hot lunch.

How to Make Tomato and Roasted Pepper Soup
Start by finely chopping the garlic.
Dice the onions and fry them with the garlic.
Add the onions and garlic to a large pan with 3 tins of chopped tomatoes.
Roughly chop the peppers and roast them in the oven.
Add the peppers to the pan and bring it to the boil.
Blend the soup and tub it up for the freezer.
If the soup is too thick you can water it down with hot water before serving.
